			<content:encoded><![CDATA[<p>Det var noen som kunne tenke seg å kjøpe brød fra Bruborg bakeri før jul. Da det var mye ribbekjør de siste ukene, måtte  jeg si nei til de fleste. Da jeg oppfordret en av de brødhungrige til å gå sammen med  flere, og bestille litt volum, tok hun meg på ordet å la inn en bestilling på 280 brød. Natta ble kort, og dagen lang, og brøda ble pakka og kjørt til torget på Steinkjer for utdeling onsdags kveld kl 1900. Der stod de i kø for å hente brøa, og på en liten og hustrig time, ble bilen tømt. Skikkelig hyggelig, og god stemning i køen.</p>
<p>Jeg bakte 7 sorter, og stekte hele dagen. Utfordrende å plutselig bake 300 brød, når man til vanlig bare baker 20-30 brød til caterings, men håper de ble fornøyde..</p>
<p>På 300 brød brukte jeg ca 10 pakker gjær, noe som gav en lang hevetid. Alle deigene hadde minst 12 timer heving/hviling på kjøl, og ble bakt med surdeig i tillegg.(se bildeinfo om brødene) Lang hviletid på deigene gjør at næringsstoffene i melet kommer mere frem, og det utvikles mere smak i brødet. Surdeigen skaper god holdbarhet og frisk smak.  Brødene er bakt uten kunstige tilsetningsstoffer og fett. (sirupskakene var det selvsagt skikkelig eksklusivt norsk smør i) Jeg kjører deigene løsere enn &#8220;vanlig&#8221;, noe som gir høyere vanninnhold, og ekstra saftige brød. Dette kan man se på krummen (innmaten) som blir litt svampaktig og &#8220;fuktig&#8221;, spesielt på landbørdet og surdeigsbrødet. Til surdeigbrødet bruker jeg 7,5 dl vann på ett kilo mel..</p>

<p>Dette er et amatørbakekurs for den som er over middels glad i velduftende gjærbakst. Vi kommer til å  ha fokus på hva som skjer i en deig ,og hvorfor noen brød blir bedre enn andre. Surdeigsbrød, lyse brød, grove brød, matpakkebrød, sunne brød, usunne brød,  hvetedeig og croissant. Elting og heving. Et praktisk kurs , hvor vi deler erfaringer, og kjenner på deigene underveis. Alle får med seg en bakeklar surdeig hjem. Kurset går over en kveld, og er basert på vanlig kjøkkenutstyr. Vi starter kurset med en varm suppe med brød til(selvsagt), før vi hiver oss igang  med eltinga.</p>

Deltagere fra både Trondheim, Fosen, Skatval og Levanger fant etterhvert veien, og ble litt klokere på søtsaker. God stemning (som vanlig på disse kursene), og mange lærevillige sjeler. Vi lagde mange typer konfekt. Blant annet med honning fra Bjørka på Sparbu.(den med mint). Vi lagde mange typer konfekt. Blant annet med honning fra Bjørka på Sparbu.(den med mint). Marsipanfigurer, skikkelig smørbokk, brente mandler og fransk nougat ble også gjennomgått. Ikke flere kurs i år, men det blir iallefall flere bakekurs på nyåret. Følg med!</p>

Pizzan har blitt kåret til Købens beste.. Frampå som jeg er, fikk jeg med meg en klump av deres faste surdeig. De mener at surdeigen gjør bunnen mere smakfull, og samtidig gjør pizzan mere lettfordøyelig, så du kan spise flere pr dag&#8230;</p>

<em>1 boks gode hakkede tomater</em><br />
<em>1 dl olivenolje</em><br />
<em>1 ½ liter hønsebuljong</em><br />
<em>(eventuelt kraft)</em><br />
<em>125 gram chorizopølse (stekechorizo)</em><br />
<em>eventuelt litt cayennepepper</em><br />
<em>1 boks kikerter</em><br />
<em>1/3 dl couscous</em></p>
<p>&nbsp;</p>
<p style="margin:0 0 16px;">-Rens og hakk løk, hvitløk, gulrot og fennikel, og surr i olje.</p>
<p><em><span class="Apple-style-span" style="font-family:Verdana, Arial, Helvetica, sans-serif;line-height:18px;">-Skrell potet og  skjær i terninger, ha de oppi sammen med resten</span></em></p>
<p style="margin:0 0 16px;"><em>-Tilsett chorizo i skiver, hakkede tomater, vann, buljongterninger og laurbærblad. La koke en 45 minutters tid. (til potetene er møre)</em></p>
<p style="margin:0 0 16px;"><em>-Tilsett kikerter (skylles godt) og  couscous, og la det svelle i ca 5 min.</em></p>
<p style="margin:0 0 16px;"><em>-Kan kvesses på med mere chili om man ønsker det. Serveres med ett herlig brød</em></p>

Ble jo selvsagt inspirert..De bruker noe mere gjær enn mange oppskrifter jeg har testet den siste tiden, men det funka bra. Oppskriften i bladet tilsa 25 g gjær på 2,5 dl vann (på Tulla brukte vi 5 gram..)Den beste pizzan fikk jeg på dag 3, når deigen hadde blitt skikkelig &#8220;moden&#8221;. Silkemyk deig med Tipo 00 mel (jeg hadde ikke økologisk fransk mel, slik som de bruker..) Bakesteinen min er knust, men jeg kjørte forvarmet plater ,full kamfer på ovnen og gratinering, så den ble bra.</p>
